Different and delicious recipes with a light touch with calories and introducing new flavors to familiar dishes. I am not an very good cook but I like fresh healthy meals. This book has it all. Whether you are eating a lower carb diet, low fat diet or (like me) just trying to eat better, this is a great book. I checked it out from the library originally and we were hooked. Now it is part of our menu plan.

Lots of simple recipes using typical ingredients. This book is several years old but I found many recipes to enjoy. I don't really enjoy cooking so want recipes that are not that time consuming, use ingredients one likely has on hand and recipes that ultimately taste good. Since I paid very little for this second hand book (like new) I can't complain and certainly have gotten my money's worth already.

PROS: Decent, relatively healthy, recipes from mainstream American cooking, no more, no less
CONS: Some are more complicated for us than the "everyday" title would imply, several border on competent but flavorless, healthy definition controls mostly fats not carbs (or type of carbs)

This cookbook turns out to be a little different when you open it up than the name implies. Unless you are an above average cook, I am not sure you would view these as "everyday meals". There are some fairly complicated recipes in this book that don't strike me as the "half hour after I get home from work before dinner" type of recipes that the title implies to me. We also prefer recipes with a little more zing and found that hard to find in this book. There are a few, but I expected more based on the editorial review. The last issue is that this cookbook follows a rather dated definition of healthy - it seeks to control mostly fats and cholesterol rather than taking a more holistic view to "healthy". Not necessarily a bad thing, but 3 pounds of white pasta is not everyone's definition of healthy.

I got this cookbook from the library and liked it so well I've just ordered my own copy. The recipes actually are light and healthy, and quick and easy as well. Much as I like my Cooking Light cookbook, many of those recipes are too time-consuming and/or require too many special ingredients for everyday cooking. This book has more quick, everyday things, and for the most part the recipes seem to be truly light rather than lightened versions of other things. Here are a few I've tried, as examples:

Chicken Breasts with Cumin, Coriander and Lime: just mix lime juice and few spices, dip the chicken in it, and cook in a skillet. So flavorful and delicious!

Moroccan Carrot Salad: Shred carrots and toss with a little lemon juice, oil, a couple of spices, and fresh cilantro.

Summer Fruit Compote: fresh mango & blueberries with a light dressing of sugar, rum, and lime juice

There's a nice section of simple fruit dessert recipes at the end, which are nice for summer.

Perhaps, I was thinking wrongly, but when I think of everyday meals, I don't think of the recipes that are included in this book. I was looking forward to recipes that helped me fix many of things I already fix in a healthier way. Instead, I consider most of the recipes in this book to be fancy (things I might use for special occasions). Though I'm sure the recipes are wonderful (I haven't tried any yet), this is just not what I was expecting from the title.

My wife and I are on two different diets. She is on a sodium restricted diet, I want to maintain my weight after losing 70 pounds on the Ideal Protein diet. The recipes are fine, I just am used to making simple dishes that I can make without salt.

Good Housekeeping has another winner with "Light & Healthy Cookbook: 375 Delectable Recipes for Everyday Meals." Recipes are presented in 10 different categories: 1) starters & appetizers, 2) soups, 3) pasta, 4) main dishes, 5) salads, 6) sandwiches & pizzas, 7) sauces & condiments, 8) bread, 9) desserts, and 10) beverages. The emphasis is generally on low-fat recipes with nourishing ingredients. Not all the recipes are extremely low-calorie; however, full nutritional information is included (calories, fat, calories from fat, carbohydrates, and sodium), allowing the reader to make informed choices.

The majority of recipes are for straight-ahead, no frills American food - the kind of fare you could easily make on a busy Tuesday night. About half the dishes are presented in full-color pictures. Further adding to the practicality of the cookbook is the relatively small number of ingredients required for most selections. As is the practice with Good Housekeeping, the recipes have been tested and re-tested to ensure reliability and ease of preparation. I've made a number of recipes from this cookbook, and I've been pleased every time. I particularly enjoyed the "Rigatoni with Beef-Fennel Sauce."

In addition to the recipes, a variety of helpful special sections are scattered throughout the book, such as "12 low-fat veggie toppings." Also, handy suggestions for accompaniments are made for many of the recipes, which could be used to develop full meals. As a result, readers could use this practical cookbook to design healthy eating patterns and an improved lifestyle. Highly recommended for readers who enjoy no-fuss cookbooks.
Our family of 6 loves many recipes in this book; it has become a family favorite when entertaining as well. We have shared several of the recipes with dinner guests. Great for those who want to transition to a healthier menu.
